BC Parks Reservation Service
BC Parks Reservation Service opened up yesterday for early reservations! Below is new information from BC Parks website.
New for 2017
Changes to Camping Reservations for the 2017 Season
We made some important and significant changes to the Discover Camping Reservation Service for 2017 stemming from feedback we received during the 2016 season. These changes include the ability to make reservations earlier in the year and some new policies to enhance fair and equitable access to reservations for everyone. Please read below for more details. - Eliminating “opening day” for reservations and extending the rolling reservation window from three to four months
- New policy to prevent the reselling and/or transferring of reservations
- Restricted booking policy to stop the practice of “overbooking”
- Discover Camping Call Centre hours

Traditional Finnish Coffee Bread
Traditional Finnish Coffee Bread
INGREDIENTS
- 1 (1/4 ounce) package active dry yeast ( original recipe specifies one package but I use 2)
- 1/2 cup lukewarm water
- 2 cups milk, scalded and cooled to lukewarm
- 1 cup sugar
- 1 teaspoon salt
- 8 -12 cardamom pods, seeded and crushed, depending on how strong a cardamom flavor you like ( I use 10-12)
- 5 eggs, beaten, divided ( 1 egg is used for glaze)
- 8 -10 cups flour
- 1/2 cup butter or 1/2 cup margarine, melted
- 1/4 cup sugar, for glazing braids ( or less)
DIRECTIONS
- Dissolve yeast in warm water in a large bowl.
- Stir in milk, sugar, salt, cardamom, 4 eggs, and 2 cups of flour.
- Stir until dough is smooth.
- Add 3 cups of flour and stir well.
- Stir in melted butter or margarine.
- Stir in 2-3 cups more flour or until you have a stiff dough.
- Turn dough out onto a floured bread board and cover with inverted bowl.
- Let rest for 15 minutes.
- Knead dough until smooth and satiny (8-10 minutes).
- Place dough in large lightly greased bowl, turning to grease top.
- Cover with plastic wrap and/or towel.
- Let dough rise in a warm place until doubled (1-2 hours).
- Punch dough down.
- Let dough rise again until almost double (30 minutes- 1 hour).
- Turn out onto floured board.
- Divide dough into thirds, working with only one third at a time.
- Divide (one- third of dough) into three parts.
- With your hands roll each part into one 18"strand.
- Braid the three stands together to form one braid, tucking ends under.
- Place on lightly greased cookie sheet.
- Let rise 20-30 minutes until puffy.
- Repeat with other two parts (each one-third of original dough).
- You will have three braids when finished.
- Brush braids with beaten egg and sprinkle with sugar.
- Bake in 400°F oven for 20-30 minutes or until braids are light brown.

BALSAMIC STEAK
BALSAMIC STEAK
INGREDIENTS
- 1 pound(s) top sirloin steak
- 1/2 c balsamic vinegar
- 1/4 c olive oil
- 1-2 tsp minced garlic
- 2 Tbsp honey or brown sugar
- dash Worcestershire sauce
- salt and pepper
- dash cayenne pepper
PREPARATION
Mix all ingredients in a sealable plastic container or Ziploc freezer bag. Let sit for at least 4 hours. Then toss the steak on the barbeque or campfire grill. Delicious! Wrap some potatoes in foil and cook in the fire as well.

How do you protect your RV over winter?
Monsoon season has started early this year so how do you protect your rv over winter.
- Cover your unit with a breathable cover not a plastic tarp, the tarp traps moisture in the unit.
- Use a chemical or mechanical moisture remover an electric heater will work as well make sure it has a thermostat.
- Leave your cabinet doors and your refrigerator open to prevent mildew.
- Blow out your water lines with compressed air or use RV antifreeze through your water system.
If your not sure how to do the anti-freeze use your owners manual or check out our web site in the video section on how to winterize your uint,or better still come on down and ours parts staff will help with you winterizing needs and even buy you a cup of coffee.

Some helpful hints when looking forRV Appliance Replacement Parts
RV consumers are sometimes disappointed when shopping for RV appliance replacement parts. Consumers think the RV parts staff should know
what appliances are in their RV by the make of their unit. RV's are not like
automobiles, every OEM will uses different appliances so unless the RV dealer
you visit sells that brand there is no way to tell which appliance is in their
unit. When looking for replacement parts for you’re appliances, if you have
the manufacturers name and model number for that specific appliance finding replacing parts is a very simple task.

DIY Microwave Popcorn
DIY Microwave Popcorn
Ingredients:
1/2 cup popcorn
1 tsp. Olive Oil or Coconut Oil or Vegetable Oil
1/2 tsp Salt (or to taste)
Directions:
In a bowl mix un-popped popcorn and oil together, pour the coated kernels into a brown paper bag, sprinkle with salt, fold bag over twice to seal in flavour. Cook in the microwave on full power for 2.5-3 minutes or until there is 2-3 seconds between pops. Carefully open the bag as steam will escape, here you can add any seasoning and seal the bag to shake, pour into serving bowl.

Autumn Kids Craft
It's that time of year again where the leaves are changing colors and starting to fall off the trees. Time to make the piles so the children can jump and run through them! Here is a fun little craft to do with the children in your life, have fun with it and put it on display!
Autumn Collage
Children and adults alike will enjoy finding those perfect leaves in all the pretty colors.
Instructions:
Press your leaves for a couple of days by placing them between sheets of newspaper under some heavy books.
Get some construction paper, glue, glitter and anything else you want to do to be creative. Arrange your leaves on the paper and glue into place. Decorate your page with glitter, crayons, pencil crayons or stickers (just to suggest a few things). Display your work of art!

RV Covers
The RV winter season is just around the corner! One of the best pieces of advice I can give to an RV Owner is to protect your investment with an RV Cover.
RV Covers are all different sizes and makes. Select the cover which is most suitable to the winter climate where the RV is stored. We have found that the biggest problem an RV Owner has is sizing their RV Cover. We recommend measuring the RV first, the size on the side of your RV is not the correct size for the cover. You will need to measure the size of the area that you want covered. Measure first, then purchase, we can have your correctly sized cover in our Parts department within one business day!

Sparkling Raspberry Lemonade
Sparkling Raspberry Lemonade
Ingredients:
- 1 12 oz bag frozen raspberries, thawed
- 1 cup lemon juice, chilled
- 1/2 cup cold water
- 1/2 cup Granulated Sugar
- 1 liter (33.8 oz) club soda, chilled
- Fresh mint, ice cubes, lemon slices and fresh raspberries, for serving
Directions:
- In a small saucepan, heat the water and granulated sugar over medium high heat, stirring occasionally, until the sugar has completely dissolved. Remove from the heat and set aside to cool.
- Place raspberries in a blender or food processor and pulse until puréed.
- Use a wooden spoon to force raspberry purée through a fine mesh strainer into a bowl. Stir raspberry purée, lemon juice, and simply syrup in a large pitcher until well blended. Pour in club soda and stir to combine.
- Pour raspberry lemonade into glasses and add fresh raspberries and ice cubes into each glass, if desired. Garnish with lemon slices and fresh mint.

Easy Bake Ahead Pancake Muffins
Makes about 16-18 muffins
Ingredients:
2 cups pancake mix
2/3 cup milk
2 eggs
1/2 cup maple syrup
Directions:
1. Preheat oven to next 350°
2. Mix together pancake mix, milk, eggs & 1/2 cup of Maple Syrup
3. Spray muffin tin with nonstick spray or use muffin liners. Fill 2/3 of the way full.
4. Add in your mix-ins - 1/2 to 1 TB of mix-ins
5. Bake for 14-15 minutes or until an inserted toothpick comes out clean
6. Store in fridge for 3-4 days or freeze for easy heat-up and eat!

Campfire Paper Bag Bacon & Eggs
Ingredients:
2 strips of fatty bacon
1 egg
Salt & pepper, hot sauce and/or Ketchup
You will need;
1 paper lunch bag
1 green pointy stick
Directions:
- Cut both bacon strips in half, giving you 4 pieces. Line the bottom of the paper lunch bag with the bacon to make a nice, fatty bacon nest for the egg.
- Crack an egg into the nest.
- Fold the top of the paper bag down carefully, 2 times, and poke a hole through the thick part with the stick.
- Carefully hold the bag over the fire so the bacon cooks slowly and the fat melts. This makes an oily paper & bacon "skillet" for the egg. Take care & keep cooking it until the egg is done.
- Eat it out of the bag... Put it on a plate! If you put it on your knee it will be hot and greasy and will ruin your pants!
- Serve with salt & pepper and your choice of ketchup and/or hot sauce.
Variation:
Add a handful of frozen hash browns or finely chopped cooked potatoes over the bacon but under the egg.

Campfire "Pie Iron" Pizza
Pizza Dough Recipe
Ingredients:
- 1 1/3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup fat-free milk
- 2 tablespoons olive oil
Mix flour, baking powder, and salt together in a bowl; stir in milk and olive oil until a soft dough forms. Turn dough onto a lightly floured surface and knead 10 times.
Campfire "Pie Iron" Pizza
Divide the pizza dough into rectangles, the size of the full opened Pie Iron. Spray the inside of the Pie Iron with non-stick spray. Lay the dough the length of the pie iron and fill one side with pizza toppings of your choice. Fold the other half of the dough over the toppings and close the Pie Iron. Cook over the fire for 5-10 minutes depending on how hot the fire is. Check the outside of the pizza to be sure that the dough is browning and be sure to rotate the Pie Iron as you cook the pizza. Pop the pizza out of the iron and enjoy!

Skillet Chicken Lasagna Recipe
Skillet Chicken Lasagna Recipe
Prep time: 10 min ~ Total time: 40 min ~ Serves: 8
Ingredients:
- 12 oz bow tie pasta
- 2 Tbsp olive oil
- 2 skinless, boneless chicken breasts, sliced or diced
- 1 Tbsp Italian seasoning, or herbes de Provence
- Salt
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 jar marinara sauce, good-quality (14 to 16 oz)
- 1 tsp red pepper flakes
- 1 cup grated mozzarella cheese, plus more if needed
- ½ cup whole milk ricotta cheese, plus more if needed
- ¼ cup grated Parmesan, plus more if needed and for serving
- 12 fresh basil leaves, cut into chiffonade or chopped, plus more if needed and for serving
Directions:
1. Cook the pasta according to the package instructions; drain and set aside.
2. Heat the oil in a large skillet over medium-high heat. Season the chicken with the Italian seasoning and some salt. Add the chicken to the skillet and cook until golden brown, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.
3. Add the onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add the broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2 to 3 minutes to let the broth reduce. Add the marinara sauce and red pepper flakes, bring to a simmer and simmer for 10 minutes.
4. Turn off the heat and add the drained pasta, mozzarella, ricotta, Parmesan and basil. Add the cooked chicken on top. Toss to combine, then add more of the mozzarella, ricotta, Parmesan or basil until the sauce is just how you like it. Serve with a sprinkling of Parmesan and a little basil on top.

Canada Day Windsock Craft
How to make a tin can windsock
This craft’s a cinch and will look great blowing in the wind on Canada Day!
1. You will need scissors, ribbon, twine, a soup can, white paint, a paint brush, red paper, plastic jewels and a glue gun.
2. Paint the can white and cut a maple leaf from the red paper. (Click here to find a template online for easy cutting)
3. Using the glue gun, stick the maple leaf, jewels and the string handle to the can. Glue ribbons to the inside of the can’s open rim.
