Comfort Food Recipe - Homemade Mac & Cheese


Ingredients

- 1(16 ounce) package elbow macaroni
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/4 tsp. dried thyme
- 1/4 tsp. cayenne pepper
- 1/8 tsp. white pepper
- 3 cups milk
- 1 pinch nutmeg
- 1/4 tsp. Worcestershire sauce
- 1 tsp. salt
- 3 cups shredded sharp cheddar cheese, divided
- 1 tsp. dijon mustard
- 1/2 cup panko bread crumbs
- 1 tbsp. butter, melted

Directions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta is cooked through but still slightly firm, about 8 minutes. Drain well.
  3. Melt 1/4 cup butter in a large saucepan over medium heat. When the butter starts to foam and bubble, stir in the flour; cook on medium heat until flour just begins to turn pale yellow, 3 to 4 minutes. Add thyme, cayenne pepper, and white pepper; cook and stir another minute, then whisk in 1 cup of milk until smooth. Pour in remaining milk and whisk again. Bring the sauce just to a simmer.
  4. Stir in nutmeg, Worcestershire sauce, and salt; simmer on medium-low heat until thickened, about 8 minutes, whisking often. Turn heat off, then add 2 1/4 cups of Cheddar cheese; stir until melted and combined. Add Dijon mustard.
  5. Transfer the macaroni into a casserole dish, then pour in the cheese sauce; stir to thoroughly combine sauce with pasta. Mix panko bread crumbs and 1 tablespoon melted butter in a small bowl, and sprinkle crumbs on top of macaroni and cheese. Sprinkle remaining 3/4 cup of Cheddar cheese on top.
  6. Bake in the preheated oven until bread crumbs and Cheddar cheese topping are golden brown, about 20 minutes.
  • Tip
  • Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.

Overnight Oatmeal - Cinnamon Apple

Ingredients
  • 1 cup steel cut oats
  • 1½ cups coconut milk
  • 1½ cups water
  • 2 apples (cored, peeled, diced)
  • 2 tablespoons brown sugar
  • 1 tablespoon coconut oil
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
Optional for Topping
  • Additional cinnamon or brown sugar
  • Chopped nuts such as almonds, walnuts, pecans, etc.
  • Fruit such as banana slices, fresh apple, or berries
Instructions
  1. Spray the inside of your slow cooker with oil thoroughly. This step is very important!
  2. Add all ingredients to the slow cooker – oats, coconut milk, water, apples, brown sugar, coconut oil, cinnamon, and sea salt. Stir to combine well.
  3. Cook on low for 5-7 hours depending on your cooker. Some take longer and some are faster. We recommend trying a test run during the day to see how long your slow cooker takes before trying overnight.
  4. Serve and allow to cool. If desired, add toppings of your choice.

Notes
Serves 6-8
Be sure to use STEEL CUT OATS. These are heartier and take longer to cook so they are better for slow cooking.
Experiment with different flavors and fruits.

Magic Reindeer Food

Magic Reindeer Food



Help Santa & his Reindeer find your home on Christmas Eve and have fun with the kids at the same time!

Sprinkle the mix of oats and edible glitter in the yard, it will glimmer in the moonlight and light the way for Santa's sleigh and the reindeer will have something to snack on while Santa is visiting your home.

INGREDIENTS:
  • 1/2 cup oats
  • 1 tsp edible red glitter (make sure this is edible glitter as the craft glitter is harmful to wildlife and the reindeer!)
  • 1 tsp edible green glitter
DIRECTIONS:
  1. Mix the oats and glitter in a bowl
  2. Spoon into a sealable bag or container (enough for each child)
  3. Sprinkle on the lawn, porch or driveway
  4. Hurry and get to sleep so Santa can make his way to your house and the reindeer can snack on your reindeer food!

Chocolate Caramel Candy Apples!


Ingredients/Materials:
  1. 5 large Granny Smith apples
  2. 1 package individually wrapped caramels, unwrapped
  3. 2 tablespoons water
  4. 12 ounces good chocolate for melting
  5. 1 tablespoon shortening
  6. Toppings for sprinkling, dipping, drizzling
  7. Wooden Skewers
Ingredients/Materials:
  1. Bring a large pot of water to a boil. Dip apples into boiling water briefly, using a slotted spoon, to remove any wax that may be present. Wipe dry, and set aside to cool. Insert sticks into the apples through the cores.
  2. Line baking sheet with wax paper and spray with cooking spray.
  3. Place the unwrapped caramels into a microwave-safe medium bowl along with 2 tablespoons of water. Cook on high for 2 minutes, then stir and continue cooking and stirring at 1 minute intervals until caramel is melted and smooth.
  4. Dip apples into the caramel to coat. Set on waxed paper; refrigerate for about 15 minutes to set.
  5. Heat the chocolate with 1 tablespoon of shortening in a microwave-safe bowl until melted and smooth. Dip apples into the chocolate to cover the layer of caramel. Return to the waxed paper to set.

Crock Pot Lasagna

Crock Pot Lasagna


Ingredients:
1 lb lean ground beef
1 onion, chopped
2 garlic cloves, smashed
1 (28 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1⁄2 teaspoons salt
1 teaspoon dried oregano
12 ounces cottage cheese (we like 2%)
1⁄2 cup grated parmesan cheese or 1⁄2 cup asiago cheese
12 ounces lasagna noodles, uncooked
16 ounces shredded mozzarella cheese

Directions:
1. Brown ground beef, onion and garlic in frypan.
2. Add tomato sauce, tomato paste, salt and oregano.
3. Cook long enough to get it warm.
4. Spoon a layer of meat sauce onto the bottom of the slow cooker.
5. Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses.
6. Repeat with sauce, noodles and cheeses until all are used up.
7. Cover and cook on low for 4 to 5 hours.

Sparkling Raspberry Lemonade

Sparkling Raspberry Lemonade


Ingredients:

  • 1 12 oz bag frozen raspberries, thawed
  • 1 cup lemon juice, chilled
  • 1/2 cup cold water
  • 1/2 cup Granulated Sugar
  • 1 liter (33.8 oz) club soda, chilled
  • Fresh mint, ice cubes, lemon slices and fresh raspberries, for serving



Directions:

  • In a small saucepan, heat the water and  granulated sugar over medium high heat, stirring occasionally, until the sugar has completely dissolved. Remove from the heat and set aside to cool.
  • Place raspberries in a blender or food processor and pulse until puréed.
  • Use a wooden spoon to force raspberry purée through a fine mesh strainer into a bowl. Stir raspberry purée, lemon juice, and simply syrup in a large pitcher until well blended.  Pour in club soda and stir to combine.
  • Pour raspberry lemonade into glasses and add fresh raspberries and ice cubes into each glass, if desired.  Garnish with lemon slices and fresh mint.

Easy Bake Ahead Pancake Muffins


Makes about 16-18 muffins

Ingredients:
2 cups pancake mix
2/3 cup milk
2 eggs
1/2 cup maple syrup

Directions:
1. Preheat oven to next 350° 
2. Mix together pancake mix, milk, eggs & 1/2 cup of Maple Syrup
3. Spray muffin tin with nonstick spray or use muffin liners.  Fill 2/3 of the way full. 
4. Add in your mix-ins - 1/2 to 1 TB of mix-ins
5. Bake for 14-15 minutes or until an inserted toothpick comes out clean
6. Store in fridge for 3-4 days or freeze for easy heat-up and eat!

How to make a tin can windsock

This craft’s a cinch and will look great blowing in the wind on Canada Day!

1. You will need scissors, ribbon, twine, a soup can, white paint, a paint brush, red paper, plastic jewels and a glue gun.
2. Paint the can white and cut a maple leaf from the red paper. (Click here to find a template online for easy cutting)

3. Using the glue gun, stick the maple leaf, jewels and the string handle to the can. Glue ribbons to the inside of the can’s open rim.

Fire Baked Potato with Ham, Cheese & Bacon


For this recipe you will need:
Large potatoes, baked
Sliced ham
Cooked bacon slices
Cheese of your choice
Sour cream for topping
Green Onion for topping
Directions:
Slice baked potatoes
Between the cuts, stuff a slice of cheese, bacon and ham
Add small dabs of butter on top of each of the slices. Salt & pepper to taste.
Wrap potato in double layer of tin foil lightly sprayed with cooking spray.
Place in the coals for 20+ minutes...until potato is hot and cheese, ham & bacon have melted together!  Be careful as they will be VERY hot!

RVing with your Dog!


One of the reasons people buy RV's is because they want to take their dog with them wherever they go.  There is nothing better than a pet friendly trip with all the comforts of home, this results in a much happier dogs!  

Here are some things to look for, plan for and tips to make your four legged family member happy on your RV road trip.
  1. Dogs are not always allowed in RV parks, hiking trails, beaches or National Parks.
    • Research your breaks, sight seeing, overnight stops before you leave so that you can be aware of where pets are welcomed.
  2. Make sure your dog's vaccinations are up to date, depending on where you are traveling to will depend on what is needed
    • Best to discuss this with your Veterinarian before leaving (also a good idea to do a general helath visit before you leave)
    • Make sure to pack the vacination certificates
  3. Pack all the right gear
    • Start by making a list of everything your pet needs and uses on a daily basis
    • You can always keep a leash, bowl, toys, etc. in your RV at all times so you don't have to worry about packing them each time
    • Always have extra leashes and collars to allow for lost or broken ones and check for leash laws in the campground you are staying (some won't allow long leashes).
    • Drinking Water - if your dog has a sensitive tummy this may avoid any upset
    • Old towels
    • Doggy waste bags, pick up what they leave
    • You dogs favorite bed or blanket
  4. Make sure your dog has an identification tag on, at all times, with the number you can be reached at while you are traveling
  5. Maintain your dogs schedule as close as you can.  This will reduce any anxiety they may feel while away from home
  6. A pet first aid kit, although not essential but could be a life saver. This can be easily stored in a plastic container or you can purchase a full kit online. Some things to add are:
    • Scissors
    • Sterile eye wash
    • Tweezers
    • Tick remover tool
    • Vet wrap
    • Gauze & Telfa pads
    • Medical tape
    • Antiseptic wash or wipes
    • Antibiotic ointment
    • Latex gloves
    • Benadryl - check doses with your Vet before leaving home
  7. Respect those around you, not everyone loves our dogs like we do :-)
  8. There are a ton of activities that you can enjoy with your dog and ones they will love doing with you while RVing.

Traveland RV is coming to Airdrie, Alberta!


Traveland RV Buys Former Sunridge Property for Expansion

 
The vacancy left in the Alberta market following the March bankruptcy of Sunridge RV, won't last for long. 

Traveland RV will open a new store later this month at the former Sunridge location just north of Calgary in Airdrie.

Sunridge closed in March, filing bankruptcy on the dealership’s $10 million of debt, the Calgary Sun reported at the time. 

The event opened an opportunity for Traveland, which acquired the property and looks to serve the vacated market, according to Traveland's Chris Clarke.  

Clarke said the company would remodel the property and rebrand the store, which he expects to open mid-month.

Traveland currently operates stores in Langley and West Kelowna, B.C., in addition to an RV rental business. Last year, the RV Dealers Association of B.C. tapped Traveland as its 2015 Dealer of the Year. 

At the Airdrie store, the dealership will sell motorized and towable lines from both Airstream and Jayco. Securing these brands was a motivating factor in the decision, according to Clarke.

“This opportunity presented itself as well as those product lines presented themselves,” he said. “We’re always looking for opportunities, it just has to be the right one.”
Clarke said the Alberta market was also enticing.  “Our idea is that Alberta is a really good market, and we think we can serve those customers well and we want to keep jobs in Airdrie,” he said.

Traveland also announced it would make a $5,000 donation to the Red Cross to help the Fort McMurray fire victims on behalf of Traveland and the new Airdrie store.
